Dairy, Egg, & Tree Nut Free Peanut Butter Cups (Minus the Peanut)

Here is a recipe for Homemade Peanut Butter Cups!  My kids and husband loved these!! With some substitutions you can even have these if you have food allergies!!

Allergy Friendly Peanut Butter Cups (Minus the Peanut)

Allergy friendly Peanut butter cups. Dairy, Egg, Tree nut and Peanut Free!
Ingredients
  • 1½ cups Soy Butter (I use Wow butter)
  • 4 cups Powdered Sugar
  • ¼ cup dairy free butter ( I use Earth Balance)
  • 3 tablespoons water
  • 3 cups chocolate chips ( I use Enjoy Life Dairy free)
  • 1 tablespoon of shortening

Instructions
  1. In a large bowl mix together the butter, powdered sugar, water, and the soy butter. This mixture will be very tough to stir once all added and will make a dough. Roll out balls of the mixture and place on a baking sheet. Place baking sheet in the freezer for 1-2 hours.
  2. After 1-2 hours mix the chocolate chips and shortening in a microwave safe bowl and microwave until melted.
  3. Take your peanut butter balls and drop in the chocolate mixture until they are completely covered. Place out to dry on either aluminum foil or wax paper to harden. Enjoy!!
