Soy Butter Creme Filled Cookies

My son has a Peanut/Tree Nut Allergy so we exchange peanut butter for Soy Butter in my home!!  Here is a recipe for cookies that he loves!! Soy Butter Cookies

 

 

Soy Butter Creme Filled Cookies

Dairy, Egg, Peanut and Tree Nut Free
Ingredients
  • Cookies:
  • ½ cup vegetable oil
  • 1 cup soy butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 9 tablespoons unsweetened applesauce
  • 3 cups flour
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • Filling:
  • ½ cup soy butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 tablespoons soy milk

Instructions
  1. In large bowl, Mix vegetable oil, soy butter, sugars, vanilla, and applesauce. Add the flour, baking soda, and salt into mixture.
  2. Take dough and form into small balls and place on an ungreased cookie sheet.
  3. Take a fork and press into the balls to flatten.
  4. Bake for 8 minutes at 375 degrees.
  5. Remove from oven and let cool.
  6. In another large bowl, mix together the soy butter, powdered sugar, vanilla, and milk. It will make a mixture that looks like frosting.
  7. Spread the frosting mixture on a cookie and then top it with another cookie to make a sandwich.
  8. Enjoy!
